Vegan Gingerbread Cookies

This is a Christmas-time favorite at my house and is often requested.  This batch was a special request from my daughter.

This is a Christmas-time favorite at my house and is often requested.  This batch was a special request from my daughter.

Ingredients:

  • 2 cups flour, sifted

  • 2 teaspoon ginger, ground

  • 1 teaspoon cinnamon, ground

  • 1/4 teaspoon nutmeg, ground

  • 1/4 teaspoon salt

  • 3/4 cup vegan butter, softened

  • 3/4 cup brown sugar, packed

  • 1/2 cup molasses

  • 1 tablespoon egg replacer

  • 1 teaspoon vanilla extract

  • water as needed

Steps:

Heat oven to 350 degrees.  Combine butter, spices, sugar, egg replacer and molasses.  Mix till soft and sugar is dissolved.  Add flour and any remaining ingredients.  Add tablespoon at a time water, mix till the dough holds together.   Roll, and cut out to shape.  Bake for about 10 minutes.  Let cool, decorate and serve.

Notes:

These cookies are delicious, and fun to make with kids.  I love having decorating parties with kids from the neighborhood for some holiday fun.
