This is what it looks like dished on a platter.  Ready for any party!

Here's another tray I made with red cabbage, Tofu, Sweet potatoes and mushrooms.

Ingredients:

  • 2 cups sweet potatoes, diced

  • 2 cups baby portobello mushrooms, halved

  • 2 cups carrots, chopped

  • 1 package seitan

  • 1 package tofu, drained

  • 1 package tempeh

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Steps:

Arrange all ingredients on a lined baking tray (image one above).  Top with oil, salt and pepper.  Bake at 45 for 30 minutes.  Serve on a platter (second image above).

Notes:

This is the fasted way to do dinner that I know.  It take only about 10 minutes of prep time, you stick the tray in the oven, and put on the timer and walk away.  You can vary what you are baking by taste.  I usually combine 1 starch (sweet potatoes, potatoes, turnips, yucca etc.), 1 green (broccoli, brussels sprout, green beans, asparagus, etc.) and one protein (tofu, tempeh, seitan) with any other vegetabels (bell peppers, carrots, beets, etc.).
