One of my favorite brands is Bob's Red Mills.  They have been around for a long time, and consistently produce quality products.  This cornbread recipe is right off their packaging.

One of my favorite brands is Bob's Red Mills.  They have been around for a long time, and consistently produce quality products.  This cornbread recipe is right off their packaging.

Ingredients:

  • Bob's Red Mill Gluten Free Corn Bread mix

  • 2 cup Almond milk

  • 2 heaped tablespoon Energy egg replacer

  • 1/2 cup grapeseed oil

Steps:

Mix all ingredients.  Pre-heat oven to 375.  Pour ingredients into a 9x9 baking dish, and bake for 30 minutes. Serve with butter and honey.

Notes:

I usually don't line or butter my baking pan when making the corn bread.  If you need a better presentation, a better way is to line the bottom with parchment paper.  This makes flipping the cornbread out easier.  This cornbread can be spruced up by adding some roasted corn kernels and chopped peppers of your choice.
