Herb Roasted Fingerling Potatoes
So tasty, you can't eat just one!
Serves Serves 6
1 pound fingerling potatoes washed and dried
2 tablespoons extra virgin olive oil
1 tablespoon fresh oregano finely chopped
1 tablespoon fresh thyme finely chopped
1/4 teaspoon sea salt
to taste black pepper freshly ground
- Preheat oven to 400 degrees F.
- Toss all ingredients in a bowl. Spread in a single layer on a baking sheet.
- Bake until tender and crisp, about 30 minutes.
- Remove from oven and serve warm
