Herb Roasted Fingerling Potatoes

So tasty, you can't eat just one!

Serves Serves 6

Ingredients:

1 pound fingerling potatoes washed and dried
2 tablespoons extra virgin olive oil
1 tablespoon fresh oregano finely chopped
1 tablespoon fresh thyme finely chopped
1/4 teaspoon sea salt
to taste black pepper freshly ground

Directions:

  • Preheat oven to 400 degrees F.
  • Toss all ingredients in a bowl. Spread in a single layer on a baking sheet.
  • Bake until tender and crisp, about 30 minutes.
  • Remove from oven and serve warm
