Creamy Cauliflower Dill Soup
This is a delicious soup with a delicate flavor and a nice texture.
1 tablespoon extra virgin olive oil
medium yellow onion coarsely chopped
6 cloves garlic chopped
1 head cauliflower chopped into 1 inch pieces
6 cups filtered water
1/3 cup fresh dill chopped
3 cups kale chopped
1 cup spinach chopped
- Heat oil in a stock pot over medium heat. Add the onion and cook covered until soft and translucent. About 5 minutes. Add the garlic and cook for another 3 minutes.
- Add the cauliflower and water. Raise the heat to high, and bring to a boil. Add half of the dill. Reduce the heat to low, cover and simmer for 10 minutes.
- Add the kale, spinach, and remaining dill. Stir and simmer for 3 minutes.
- Blend the soup in the pot using an immersion blender, until smooth and creamy. Season with salt and pepper to taste. Serve.
