Broccoli Mint Soup
Easy, delicious and has great texture.
1 cup broccoli chopped into small florets
2 cups filtered water
1/2 cup raw cashews soaked overnight
1 medium avocado pitted
2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1 tablespoon nutritional yeast
1 tablespoon raw agave nectar
2 cloves garlic peeled
1 teaspoon sea salt
1/4 teaspoon ground black pepper
1/4 cup fresh mint leaves
1/2 cup broccoli florets bite sized
- Place the first 11 ingredients in a high speed blender and blend until smooth, creamy and warm.
- Add the mint to the blender and pulse a few times to combine.
- Pour the soup into 2 bowls. Add a sprig of mint and the remaining broccoli florets to the middle of each bowl. The broccoli stalks can be peeled, cubed and added to the bowl as well.
- Serves 2, as a main-dish.
