Pom-Berry-Citrus Juice

As delicious as it looks.

Serves 4

1 medium pomegranate seeds
2 medium meyers lemon peel cut off
1/3 cup blueberries (fresh or frozen)
1 1/2 cups filtered water
1 tablespoon raw agave nectar

  • To remove the seeds from the pomegranate: slice in half, hold one of the halves in your left hand (assuming your left handed), cut-side down, use your right hand to "spank" the skin of the pomegranate, over a bowl, until all the seeds fall into the bowl. Repeat with the other half. When all of the seeds have dropped into the bowl, fill the bowl with water. The seeds will sink and the pith will float. Scoop out the pith. Drain the seeds.
  • In a high-speed blender, combine the pomegranate seeds, meyers lemons, blueberries, water, and agave and blend until smooth. Strain through a fine-mesh strainer, pressing down on the solids to exract all the juice.
  • Pour into 2 glasses, and enjoy!
