Quinoa and Arugula Salad
A hearty and delicious salad, it makes a very good lunch or a light dinner.
2 cups quinoa cooked
1 bunch arugula
1/2 cup pine nuts toasted
1/2 cup sun dried tomatoes chopped, soaked for 15 minutes in warm water
1 tablespoon extra virgin olive oil
to taste sea salt
to taste ground black pepper
- Fluff Quinoa with a fork.
- Toss Oil, Lime juice, Salt, Pepper, drained sun dried tomatoes, Pine Nuts and arugula.
- Add to Quinoa and toss some more. Serve room temperature or chilled.
