Avocado Sprout Salad

Slightly salty taste from the ume vinegar pairs nicely with tahani and sprouts.

Serves 4

Ingredients:

1 cup sunflower sprouts
1/2 cup pea sprouts
1/2 cup broccoli sprouts
1 medium avocado sliced
1 teaspoon ume vinegar
1 teaspoon tahini
1 teaspoon dulse flakes
1 teaspoon nutritional yeast
1 teaspoon brown rice vinegar
2 teaspoon extra virgin olive oil

Directions:

  • Add all ingredients except avocado to a mixing bowl and toss to coat the sprouts.
  • Arrange the sprouts on a server plate and arrange the avocado slices on top.
  • Serve immediately.
