Chocolate Chip Cookies

Very tasty! These cookies are lite and airy, almost cake-like. You can't stop at one.


Serves 4


1/4 teaspoon sea salt
1/2 cup filtered water
1 cup whole wheat pastry flour
1/2 teaspoon baking soda
1/4 cup grade b maple syrup
1/2 cup raw walnuts toasted and coarsely chopped (may substitue other nuts)
1/2 cup spelt flour
1/2 cup white whole wheat flour
1 cup malt-sweetened vegan chocolate chips
1/4 cup brown rice syrup
1 teaspoon vanilla
1/2 cup coconut oil melted


  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment or lightly brush with oil.
  • In a large bowl, mix dry ingredients. In a medium bowl, whisk wet ingredients and stir into dry.
  • Transfer heaping tablespoons of dough onto baking sheet. Leave an inch of space between the cookies.
  • Bake for 15 minutes, or until cookies are a golden color. Transfer to a baking rack to cool.
