Pressed Cabbage Salad
Easy and tasty. Nice side salad.
1/4 cup onion cut into thin half-moons
1/2 teaspoon sea salt
1 cup cucumber sliced
2 cups chinese cabbage sliced thin
1/2 cup red radish sliced thin
3 tablespoons brown rice vinegar
- Place all ingredients in a large ceramic bowl and mix thoroughly to coat all vegetables evenly with vinegar and salt.
- Place a plate on top of the vegetables and an object to weight down the plate. The salt will draw the water out of the vegetables.
- Let the vegetables sit for 1-2 hours. Remove vegetables, squeeze out excess liquid, and place in a serving bowl.
