Breakfast Rice & Raisins

Delicious, easy and quick. A tasty way to use leftover rice.


Serves 4


3 cups cooked brown rice
1/2 cup raisins
1/4 cup maple syrup
1 cup plain unsweetened soy milk (may substitue rice milk, or hemp milk)
1/2 cup raw almonds toasted and coarsely chopped (may substitue other nuts)
1 tablespoon ground cinnamon
1/2 teaspoon cardamon


  • Add all the ingredients into a medium saucepan and stir to combine.
  • Bring to a boil over medium-high heat, then reduce the heat to low and simmer, while stirring, for 5 minutes, or until desired thickeness is achieved.
