This dish is a typical Tagine dish, used in the middle east for centuries. Delicious food with minimal fuss.
2 medium onion sliced
2 medium potatoes cut in wedges
4 carrots cut into 2 inch wedges
2 zucchini cut into 2 inch wedges
1 cup chickpeas cooked
1 tbsp cumin powder
1 tbsp coriander powder
2 tbsp grapeseed oil
to taste sea salt
10-12 fresh mint leaves chopped
to taste black pepper ground
- Put the oil at the base of the Tagine.
- Arrange all the vegetables, onions first, then layering and adding spices as you go (see image).
- PLace on stove, high heat, for about 5 minutes, then reduce heat to simmer. Cook for about 30 minutes and serve!
- NOTE that the lid may not sit tightly on the base at first, however a the vegetables cook, it will settle on the base.
