Spinach Mushroom Curry

Easy, quick recipe for a hearty main dish. Best with Rice or Paratha.


Serves 4-6


1 cup mushrooms sliced
4 cups spinach
1 onion chopped
1 inch ginger ground
1 green chillies ground
2 tbsp curry powder
2 tbsp coconut oil
1 cup filtered water


  • Heat Oil. Add onions, and cook till tender.
  • Add mushrooms. Add salt to make the mushrooms "sweat". This will prevent burning.
  • Add remaining ingredients and sautee. Add water as needed. Cook till mushrooms are done. Serve with Rice.
