Cashew Nut Loaf

A very hearty dish appropriate for a holiday meal, it's a winter favorite in our house


Serves 8-10


2 cups chopped raw cashews
2 cups cooked brown rice
1 cup rice milk
2 large onion finely chopped
4 slices whole wheat bread
4 tablespoon vegetable oil
2 tablespoon soy sauce
4 teaspoon mint parsley
1 teaspoon dried rubbed sage
1 teaspoon dried dried thyme


  • Preheat Oven at 350°F
  • Combine finely chopped nuts, crumbled bread, rice, chopped onions.
  • Add the remaining ingredients, blend well.
  • Pour mixture into a well oiled loaf pan, and cook in oven for 1 hour.
  • Let it sit for 10 minutes before turning on to a platter.
  • Serve with Cashew Gravy.
