Baked Oatmeal with blueberries

Easy to make ahead, hearty, healthy and delicious breakfast

Serves

Ingredients:

2 1/2 cups rolled oats
2 tsp non-aluminum baking powder
1/2 tsp sea salt
1/2 tsp ground cinnamon
1/2 cup sugar in the raw
2 tbsp ground flax seed
2 1/2 cups coconut milk
1 cup blueberries

Directions:

  • Pre-heat oven to 400°F
  • Mix all ingredients except blueberries
  • Add to a oven safe baking dish, or 8 individual 12 oz mason jars
  • Top with blueberries
  • Bake uncovered for 35 minutes

Notes:

  • Bake in individual cups for a instant to-go breakfast.
  • Add your choice of nuts or seeds to increase flavor and add protien
