Mango-Lime Chia Breakfast Pudding

Breakfast pudding that is filling and tastes like a creamy mango.


Serves Serves 2


1 1/2 cups filtered water
1/4 cup chia seeds
1/4 cup raw cashews
1 mango Pit and skin removed
2 medjool dates pit removed
1 teaspoon fresh lime juice
1/2 cup fresh blueberries


  • Place water, chia seeds, cashews, mango, dates, and lime juice in a high speed blender. Blend until smooth. Pour into (2) pint-sized mason jars. Top with blueberries. Place lid on jars. Place in the refridgerator overnight.
  • In the morning, enjoy!
