A vegan alternative to the usual favorite.
Serves 4 - 6
5 tablespoon vegan butter
4 cups almond milk
4 tablespoon white whole wheat flour
2 teaspoon sea salt
1/2 teaspoon nutmeg fresh ground
2 large bunches spinach
- Melt butter on medium heat. Add flour, stir vigorously, till the mixture starts changing color.
- Add almond milk, little at a time, stirring all the time using a whisk. Repeat till all the milk is added, continue to heat for 1-2 minutes.
- Add salt, nutmeg to taste. Add spinach, chopped if larger leaves. Stir till spinach is wilted and starts to change color.
- Remove from heat, serve hot.
